Sweet Potato and Tofu Wrap A delicious vegetarian wrap consisting of sweet potato, tofu, and kale. This power-packed wrap is easy to make and tastes great. The Asian sauce gives the tofu a wonderfully sweet yet savory flavor. It is perfect for lunch. Serve it with a side of your favorite fresh vegetables. The sweet potato is loaded with vitamins B6, C, and D and other minerals that help in relaxation and relieve stress. Kale is high in fiber and packed with antioxidants, vitamin K, high levels of vitamins A, and C as well as calcium. Kale is also an anti-inflammatory food and can help lower cholesterol. This tasty, simple recipe makes a nice one-dish meal for lunch or dinner. It can be easily converted to a vegetarian recipe by substituting a spicy, vegetarian-style sausage for the andouille, and vegetable stock for the chicken stock. The tangy flavor of the feta cheese nicely complements the spicy sausage, while the cilantro gives the dish a crisp, fresh taste. Portobello Mushroom Stroganoff A vegetarian alternative to a classic dish, Beef Stroganoff. Portobellos are a perfect alternative for this hearty dish that is traditionally created with strips of beef served in a sauce with smetana or sour cream. We usually serve stroganoff over wide whole wheat egg noodles; however, rice is the traditional accompaniment. Vegans can also enjoy this dish by substituting vegan equivalents of the sour cream and/or plain yogurt and serve it over rice. This tasty little martini is pretty simple to make. If you're making an 8-oz martini, this has a significant amount of caffeine in it. So, don't have it too late in the evening, unless you're looking for an extra boost of energy. Otherwise, you might want to consider using a good quality de-caffeinated espresso to make this. The better quality espresso you use, the cleaner this drink will taste. Our favorite espresso blend is from LaVazza, but you can use any dark-roasted coffee. Using freshly ground espresso will produce that nice foam you see floating on top. The cooler the temperatures get, the more and more we gravitate towards comfort food. This recipe is a variation on the traditional chicken cacciatore (or hunters stew). It omits the bell peppers, but instead include mushrooms. This meal is great accompanied with a good rustic bread, pasta or polenta, but the dish is definitely a big enough meal on its own if you prefer to skip the sides. We used dry white wine in the recipe, but you can substitute chicken stock, red wine or sweet red vermouth. Bun Thit Nuong Bun Thit Nuong is usually served as a lunch menu item in Vietnam; however, we decided to bring it into prime time. Vietnamese food is ranked as one of the healthiest cuisines in the world due to their use of fresh ingredients, minimal use of oil, and reliance on herbs and vegetables. After reading an article about Bun Thit Nuong on one of our favorite food blogs, we knew we had to make the dish. After researching several recipes, we decided to venture out and attempt to create the dish loved by so many Vietnamese. We are not going to keep this blog entry long. We take no credit for this recipe, having found this combination of ingredients by searching the internet for a "fresh" margarita recipe ... one that doesn't involve ingredients like Rose's Lime Juice (yuck!), triple sec or some fructose-laden, ready-to-drink mix. This is really good, but it is STRONG. Our advice is to let the ice melt for a few minutes before you start drinking it. Any dog owner knows that you cannot utter (or even whisper) the word "treat" without having your dog go hysterical. We've resorted to spelling the word or referring to it by other names in order to avoid making Bella go crazy. We did some research a while back to see how easy it is to make homemade and healthy dog treats. This is the result ... or at least one of the results, since you can experiment with varying some of the ingredients. This one is literally for the dogs. We have a 9-pound Shorkie (Shih Tzu / Yorkie mix) named Bella, and decided a while back to look for healthier alternatives for dog food. She never seemed to like any of the dog foods we bought for her, and with the periodic dog food recalls you hear about, we did some research into what healthy alternatives we could make for her. |
