If you have never tried seitan (or perhaps are unfamiliar with what it is), this simple, tasty pasta recipe is a great way to enjoy it. Seitan provides a good source of protein and texture for this pasta dish. In addition to the porcini mushrooms, the bechamel sauce incorporates the mushroom broth used to rehydrate the dried mushrooms and packs some extra flavor into the creamy sauce. This vegetarian dish can be prepared quickly and is a a great choice for a healthy, hassle free, evening meal any day of the week.

Portobello Mushroom Stroganoff A vegetarian alternative to a classic dish, Beef Stroganoff. Portobellos are a perfect alternative for this hearty dish that is traditionally created with strips of beef served in a sauce with smetana or sour cream. We usually serve stroganoff over wide whole wheat egg noodles; however, rice is the traditional accompaniment. Vegans can also enjoy this dish by substituting vegan equivalents of the sour cream and/or plain yogurt and serve it over rice. The cooler the temperatures get, the more and more we gravitate towards comfort food. This recipe is a variation on the traditional chicken cacciatore (or hunters stew). It omits the bell peppers, but instead include mushrooms. This meal is great accompanied with a good rustic bread, pasta or polenta, but the dish is definitely a big enough meal on its own if you prefer to skip the sides. We used dry white wine in the recipe, but you can substitute chicken stock, red wine or sweet red vermouth. |
